Wally likes it when I post food. So here you go, Wally, a beauty shot of last night’s dinner on it’s way into the oven.
Look at the color of those carrots! I only wish I hadn’t been so distracted by the mouth-watering, soul-stirring, family-drawing, pet-drooling aromas that I forgot to take a beauty shot as it came OUT of the oven.
Mmmm. Mmmm. Mmmmm.
I made an almost identical pan for the friends, minus the onions, the salt and pepper and the drizzle of red apple infused balsamic vinegar – none of which are good for dogs.
The friends enjoyed their roasted root vegetables and butternut squash paired with organic chicken.
I paired ours with super sweet white corn on the cob and amazingly flavorful sliced black heirloom tomatoes.
I love the farmer’s market!
Earlier in the day, I planted four varieties of lettuce. The farmer who sold me the plants said they will continue to grow through Thanksgiving – maybe even Christmas. I told him I have a small greenhouse to put over them before it starts to snow.
He said I’ll be just fine.

Oh dear, now you’ve reminded me that I still have two huge sweet potatoes that I bought at the Farmer’s Market and haven’t baked yet. So I guess that means I’ll have to cook today after all ……..

Well, I have to confess that I didn’t cook them after all. I looked them over and saw that they would still be good for several days, so I went ahead with what I already had planned before I read your post. I felt guilty, but just a very little bit.
